Chicken Empanada (pattie)

*Got this recipe from the website of Panlasang Pinoy. Tested and it’s really good.

Crust:

3 c all-purpose flour

4 tbsp sugar

6 tbsp cold water

1 pc egg

1 c cold butter, cut into small pieces

½ tsp baking powder

½ tsp salt

Make the dough:

Combine all dry ingredients. Mix well.Cut the butter into the dry ingredients using fork or pastry blender.Add water gradually and mix all ingredients until a dough is formed.Divide dough into small spherical pieces and set aside in a cool place for at least 20 mins.Flatten a dough using a rolling pin while creating a round shape.

Filling:

1 ½ lb boneless chicken breast, cut into cubes

1 pc medium onion,

minced1 tbsp garlic,

minced1 c potato,

diced1 c carrot,

diced1 c green peas

¼ c raisins

½ tsp salt

½ tsp ground black pepper

1 tsp sugar

½ piece chicken cube in

1/4 c water

2 tbsp cooking oil

Heat pan with cooking oil. Saute garlic and onion. Add chicken breast then cook until brown.Add water with chicken cube then simmer for 10 mins. Put carrots and potatoes and simmer for 5 mins. Add green peas, raisins and sugar then simmer for 5 mins. Sprinkle with salt and pepper. To prepare:Preheat oven on 400F for 10 mins. Prepare baking trays with parchment paper.Arrange the filling into flatten doughs. Fold dough and press the edges and seal it using a fork.Glaze each prepared doughs with egg wash using pastry brush.Egg wash – one egg white beaten lightly and mixed with a few drops of water.Arrange it on baking trays and bake for 25 minutes.
