bagoong rice ( utterlygolden )


INGREDIENTS:

Toppings

  • ½ medium Green Mango (Cut in strips)

  • 1 small Onion (chopped)

  • Dried Shrimp Omelet

  • 1 medium egg

  • Dried shrimp (dried alamang)

  • ¼ teaspoon fish sauce(patis)

  • ¼ teaspoon water

For the Bagoong Rice

  • 2 Tablespoons cooking oil

  • ¼ cup chicken or pork tenderloin

  • 1 Tablespoon chopped garlic

  • 3 cups cooked/steamed rice

  • 4 tablespoons shrimp paste (bagoong)

  • 2 tablespoons soy sauce

  • 1 teaspoon sugar

  • 1/8 teaspoon red cayenne pepper

  • 1/8 cup water

Let’s cook!

For the dried shrimp omelet, beat the egg, stir in the dried shrimp, fish sauce and water. Cook in a pan on medium heat, turn the omelet and let cook on one side.After frying the omelet, slice into strips and set aside.In a big pan, or the pan where the omelet was cooked (make sure it’s just 2 Tbsps of oil) sauté chicken/pork.Stir in the garlic, soy sauce, shrimp paste, sugar and water.Let simmer or until the water is reduced.Put in the rice and stir. Make sure that the rice does not stick to the bottom of the pan.Once the rice is done.Put on a deep dish, top with green mango, dried shrimp omelet and the chopped onion.Serve warm.
